ALMA + GIL (pronounced "Hill") was founded by Gerry and Mandy, Named after Gerry's grandparents Alma and Gilberto.
Our dine-in Concept at 392 Dufferin St, represents their hunger to cook nostalgic food while using their fine dining background, NOW serving Brunch and Dinner.

Chef Mandy Sou:
After years of cooking in some of Toronto’s most respected kitchens—like Globe Bistro, Yours Truly, Momofuku Noodle Bar, and Linda Modern Thai—Chef Mandy Sou found herself constantly coming back to one thing: the nostalgia of a Hong Kong diner. She first brought that love for brunch to life at Pray Tell, and since 2021, she’s been the heart of our pop-ups, dreaming up the sandos and milk teas you’ve come to know through our Pop-ups.

Now at 392 Dufferin St., Chef Sou has finally created a space where her fine-dining roots meet the comfort of home. She’s reimagined those classic HK ‘cha chaan tang’ flavors into a menu that’s creative and unique, but above all, welcoming to everyone who walks through our doors.

Chef Gerry Quintero:
His culinary path is rooted in the vibrant flavours of his native Mexico and a lifelong curiosity for how things are made. His pathway being Toronto's food scene, think, C5, Scarpetta, Yours Truly, El Caballito, Avelo.
​
With Mandy, he wanted to build something more personal. Gerry focuses on simple, honest ingredients, employing techniques of fermentation, dry aging and nixtamalization. Honouring Mexican-inspired flavours.

Chef Quintero is a firm believer that great food doesn't need to be posh. It needs to tell a story and bring people together.
